You Really Are What You Eat!

    No health topic is more important or confusing than diet. It is filled with more mis-information and hype than any other subject The producers of foods that are the worst for us spend billions of dollars a year to sell us their products, and they are very effective. These industries have commercials for cereal, pop, candy and fast foods that tell us if we want to have fun or be loved we need to use their products. Who would believe that a candy bar, soft drink, or fast food could be bad for you after watching healthy young actors use those products on a commercial?  What is probably the most confusing part is that even the "experts" can’t agree on a healthy diet for human beings. Two points that I would like you to learn from this article is this.

    What we put in our mouths all day long is more important than any pill we can take 

    If you are overweight, have high blood pressure, diabetes, high cholesterol, heart disease or any degenerative diseases you need to look closely at your diet.

   One concept that explains why most low calorie diets don’t work is the glycemic index of foods.

The Glycemic Index

     The glycemic index of a food describes how fast that food increases your blood glucose level and how much insulin is secreted to control the extra glucose. Foods with more simple sugars raise your blood glucose faster, and higher. Foods with the highest glycemic index are the processed carbohydrates like white flour, sugar, rice cakes, etc.... For example seven small pieces of candy have the same amount of carbohydrates as four cups of broccoli.  One teaspoon of flour has almost the same amount of carbohydrates as one teaspoon of sugar. Your pancreas responds to this increase in blood glucose by increasing your insulin level in proportion. Your body is very sensitive to blood sugar and will only operate properly in a very narrow range. Insulin does two very important things to lower your glucose, or blood sugar, back to within this normal range. First it tells your cells to take in the excess glucose to get it out of your blood stream. The cells then individually turn the excess glucose into fat or glycogen for storage. We have a very limited storage capacity for glycogen. Unfortunately we have an unlimited storage capacity for fat. The second function of insulin is to tell the cells not to let any glucose or fat out of the cells into the blood stream as long as the glucose levels are elevated. This effectively locks fat inside your cells. The combination of these two factors makes it impossible to lose fat as long as you have an elevation of insulin in your blood stream. 

    If you eat a breakfast with a high glycemic index, like bagels, donuts, rice cakes or most cereals, and then four hours later eat a lunch with a high glycemic index and then eat a similar dinner it is impossible for you to lose weight all day. 

    If you have a soft drink which sometimes have a teaspoon of sugar per ounce at anytime during the day that makes it much worse. This is completely contrary to prior thinking. We have been told to eat high carbohydrate foods and only watch our fat intake for years.
   We each have a different response to glucose. Those with a lower response can apparently stay thin and eat more carbohydrates. That explains those people that can eat candy and pasta and not gain weight. We all know a few of those people. The rest of us have to watch more closely what we eat.

    Foods with a low glycemic index keep your pancreas and every cell in your body more AT-EASE by not overworking those systems.

Water

   Our bodies are largely made up of water. It is agreed by all sources that pure water is important to good health. Use a good quality water purifier or buy good water for drinking and cooking.

Oils

  The best oil for cooking is grape seed oil.   Precook the oil at least 2 minutes before adding any food to the pan and always coat (season)  your pans with a coat of oil before storing them away,  The most natural oil on the market today is extra virgin olive oil. To make extra virgin olive oil they pick ripe olives, squeeze them and catch the oil that comes out. The second best choice is expeller pressed canola oil. All other oils are treated through several processes that make them unsafe for us to eat. All deep fat foods are unsafe because heating the oil changes the character of the oil. All margarine is made by further processing these already bad oils. Margarine is not a safe food to eat. Butter is much more natural. You should use as small amount of butter in place of margarine as you can.
    There are also oils we should add to our diet. Fish, like salmon, avocados, macadamia nuts, and flaxseeds contain oil that is good for us and should be eaten more.
